Levi’s Cool Veggie Rundown
Serves 3 or 4
- Heat the oil in a saucepan and add the potatoes.
- Cook gently for 10 minutes, then tip in the peppers and shredded cabbage leaves.
- Cook for a few more minutes before adding a jar of my Coconut Rundown Sauce.
- Let the whole mixture simmer for 5 minutes then serve over boiled rice. Get it while it's hot!

- 2 medium baking potatoes, peeled and cut into small dice
- 1/2 red pepper, chopped into large dice
- 1/2 green pepper, chopped into large dice
- 1 jar of Coconut Rundown Cooking Sauce
- 5 green cabbage leaves, shredded
- 2 tbsp vegetable oil
