Levi’s Cool Veggie Rundown

Serves 3 or 4

  • Heat the oil in a saucepan and add the potatoes.
  • Cook gently for 10 minutes, then tip in the peppers and shredded cabbage leaves.
  • Cook for a few more minutes before adding a jar of my Coconut Rundown Sauce.
  • Let the whole mixture simmer for 5 minutes then serve over boiled rice. Get it while it's hot!

  • 2 medium baking potatoes, peeled and cut into small dice
  • 1/2 red pepper, chopped into large dice
  • 1/2 green pepper, chopped into large dice
  • 1 jar of Coconut Rundown Cooking Sauce
  • 5 green cabbage leaves, shredded
  • 2 tbsp vegetable oil
