Jamaican Brown Stew – Quick, easy and guaranteed to impress!

  
  • Place the diced potatoes into a pan of boiling salted water and bring back to the boil, leave to simmer for approx 20 minutes
  • Heat the oil in a pan & carefully add the chunks of chicken
  • Add the carrot, broccoli, peas & thyme to the pan and lightly sauté. Pour over the jar of Jamaican Brown Stew Sauce and simmer for 5 minutes.
  • Take a casserole dish pour in
  • Place in a pre-heated oven at 220°C. Bake for approx 20 minutes
  • While the chicken is in the oven, remove the potatoes from the boil and drain. Mash with a little butter and black pepper until smooth and creamy
  • Serve a dollop of mash with a good spoon of the stew and enjoy!

  • 1 jar Jamaican Brown Stew Sauce
  • 3-4 chicken breasts - diced
  • 4 carrots - peeled & cut into strips
  • 2 large tomatoes - deseeded and large diced
  • 50g garden peas
  • 1 head of broccoli - cut into small florets
  • Sprig thyme
  • Sprig mint
  • 2tbsp vegetable oil
  • 6 large sweet potatoes - peeled and diced
