Jamaican Brown Stew – Quick, easy and guaranteed to impress!
- Place the diced potatoes into a pan of boiling salted water and bring back to the boil, leave to simmer for approx 20 minutes
- Heat the oil in a pan & carefully add the chunks of chicken
- Add the carrot, broccoli, peas & thyme to the pan and lightly sauté. Pour over the jar of Jamaican Brown Stew Sauce and simmer for 5 minutes.
- Take a casserole dish pour in
- Place in a pre-heated oven at 220°C. Bake for approx 20 minutes
- While the chicken is in the oven, remove the potatoes from the boil and drain. Mash with a little butter and black pepper until smooth and creamy
- Serve a dollop of mash with a good spoon of the stew and enjoy!
This has the added bonus of having extra vegetables which is a good way of getting your 5 a day!

- 1 jar Jamaican Brown Stew Sauce
- 3-4 chicken breasts - diced
- 4 carrots - peeled & cut into strips
- 2 large tomatoes - deseeded and large diced
- 50g garden peas
- 1 head of broccoli - cut into small florets
- Sprig thyme
- Sprig mint
- 2tbsp vegetable oil
- 6 large sweet potatoes - peeled and diced
